Chef Quique Dacosta, holder of 7 Michelin stars across his restaurants, brings the original paella technique from Valencia to Fitzrovia. Every paella is cooked over live wood fire using bomba rice from Valencia's Albufera region — the same rice that's been used for paella since the dish was invented.
The result: the perfect socarrat (the crispy caramelized rice layer at the bottom of the pan) and the authentic flavors that made paella the most famous rice dish in the world.
