Chargrilled meat or fish is cooked perfectly once the initial strong flames die down. However, paella tastes amazing cooked on those tall raw flames. Have a go at cooking a paella the traditional Valencian way, by placing the pan over the flames, whilst the charcoals are heating up ready for your grill cooking.
Olive oil coca bread
• Pre-heat the oven at 180 degrees.
• Place in the oven and bake for 4 minutes until you get a golden-brown crust.
• Add some extra virgin olive oil glaze.
Traditional aioli
• Serve in your favourite ramekin and enjoy!

Grass-fed Cornwall Ribeye, chimichurri
• Bring the rib eye to room temperature by taking from the fridge 45 minutes before cooking.
• Season it to your taste and massage a little olive oil on either side.
• Preheat a grill pan to very high heat and cook the rib eye for 3 minutes on each side. Remove the meat and let it rest on a plate for 5 minutes.
• For a medium-rare, turn the stove on high heat and cook for 45 seconds on each side. If you want it medium, cook it for 1 and a half minutes on each side.
Mediterranean red prawns
• Preheat a grilling pan without adding any oil.
• While the grilling pan gets hot, season the prawns with salt and coat them in olive oil.
• Place the prawns on the pan and cook for 2 minutes on each side.
Rack of pork, Korean marinate
• Preheat the oven at 200º, place the rack of pork on a tray lined with baking paper and put it in the oven.
• Cook for 7 minutes.
• Remove from the oven without turning it off. Glaze with the marinade, place it back in the oven and cook for another 4 minutes.
